Summer and Soup don’t really go together (unless you are talking gazpacho and chilled soups) but since soup is one of my favorite type of dishes, I like t indulge year round.
All of the wonderful veggies coming into season mean delightfully fresh ingredients to concoct summer soups!
Fennel is a fantastic ingredient and holds up well in warm and cold soups, adding a light and refreshing touch to recipes.
Remember fennel if you like to make your own stock as well – I use it in place of celery frequently in stock and soups.
Even with the high temps of summer, you can refresh with some of our Fennel Summer Soup Choices … YUM!
